I LOVE key lime pie and never knew it until I met my hubby. We had the biggest piece I have ever seen and quite possibly the best I have ever had at a fun little Chicago restaurant. I wish I could remember the name of that place! After that perfect little date I have tried and tried to make a key lime pie without much success until this little recipe came along. I was at a cooking class and this was perfect ending to class.
What you will need: 1 pre-made graham cracker pie crust 2 egg yolks 2 tsp grated lime zest 1/2 cup fresh lime juice(2-3) 1 14oz can sweetened condensed milk Whipped cream for topping
Directions: 1.) Preheat oven to 350 degrees. 2.) In a medium bowl, beat 2 egg yolks. Add condensed milk, lime juice, and zest, beat together. Pour filling in crust and bake for 15 minutes. 3.) Allow pie to cool slightly, and place pie to sit in fridge overnight before serving. Serve with whipped cream!
